This is something I desperately wish we had more canon info on. Can you experts help me out? Maybe even link me to some other theories about this stuff.
Q. Are youkai immortal? They won't die (naturally) unless they are slain. A. I would answer no. We know there are elderly youkai. Eg. Totosai. He has or probably will live longer than a human, but I do think old age will get him if he isnt killed first. They have amazing healing abilities but surely that doesnt fend off breakdown forever.... Or they would stop aging all together.
Q. How long DO they live, thanks to their resilience and healing? A. ?
Q. How slowly or quickly do they mature? A. A lot of people think they age a lot more slowly. Sesshomaru didn't change while Inuyasha was pinned to the tree? 50 yrs? Shippou didnt age in (4?) years? Any other support for that?
Q. When they become mature do they have to prove themselves somehow? A.
Q. What do youkai DO? A. Totosai has a job. Jaken's job is being a servant. Kouga sort of has a job. What about other youkai? They dont seem to have a society and jobs they just kind of do whatever? At what age do kids get jobs, then when do they leave their parents?
Q. How does youki, their magic, work? How does it compare to jyaki? A. I know I saw a good breakdown of this once. Basically jyaki is when youki is left behind, tainting an object.
Q. How do they rule themselves? A. Individual tribes have leaders, of course. But there's no king. No military?

a possible answer for your question on when they mature do they have to prove themselves:
as we saw in both the manga and anime, Sesshomaru had to prove himself in order to get his bakusaiga, and i see that as a test of his maturity. he was a huge immature brat at the beginning because he didnt get tetsusaiga, he said he despised humans, he kept trying to kill inuyasha, and he kept trying to get the tetsusaiga and kept trying to kill inuyasha using childish and/or dirty ways to achieve his goal. over the course of the series, we see him save rin and let her travel with him despite being a mere human child, he eventually lets go of his longing for the tetsusaiga as well as his hatred for inuyasha, and eventually protect other humans besides rin even if only for a short period of time. while this may have been sesshomaru's personal test of maturity, i believe that youkai do have to prove themselves when they reach maturity.
